Right, I'm considering selling one of my Strats (probably the Squier Tom Delonge, which was an impulse buy I kinda regret now) and using some money from my savings account to buy an Epiphone Les Paul Standard (hopefully a black one as I'm not keen on the Sunbursts) and I'm wondering if anyone knows of any websites that sell them?

The best place to sell is in the back of the magazines like "Guitarist" or "Total Guitar" as they seem to be read by folks who don't understand what the internet is.
The best place to buy is another matter, Gibsons and Epiphone are noted for improving but still inconsistent quality control, I'd personally not buy a Les Paul without trying it in person first.
I'll root out some websites for reputable shops in abit

OK, this is a lot less easy than I thought based on the huge number of Epiphone Les Paul varients I can find!!! And the few that don't say "ring to buy" type messages.
So... change of plan
Go to the biggest WH Smith's newsagent or equivalent and pick up a copy of "Guitarist" or "Guitar Buyer" avoiding ones like "Total Guitar" and "Guitar Techniques".
The first couple focus on buying and selling gear really, the last two concentrate on learning songs etc.
Then trawl through the plentiful advertsfor the shops and give them a ring to find the best price on the EXACT guitar you want.
Reputable stores include Sounds Great in Manchester (ask for Rick in guitars)
Cranes in Cardiff (no website at all as far as I remember)
If price rather than service is your decider I've heard that Soho Soundhouse in London is good.
Also know EXACTLY what you're after down to year of production. The specifications on some guitars change almost annually, so last year's model might be completely different to this year's model of the same name.
The other think to investigate is whether buying in the USA and having it shipped over might be cheaper!!!
Music123 have great deals on a lot of guitars, and will ship to the UK. Guitars are nearly always cheaper in America by a huge ammount and the pund is fairly strong against the dollar right now. You'll have to pay VAT and import tax (comes to 22% in total) but even with shipping lumped on top of that you might be able to save some money or get a higher grade instrument.
