Literally, it's the adjective for "strange" or "perverted". So the phrase "Anata wa hentai hito desu yo!" would translate as "You are a strange person!" (or more colloquially "You're a pervert!" )
But, as Stoo says, it is more commonly used to describe Japanese cartoon porn.

A couple of years ago, I foolishly decided to have Birthday drinks with all my various groups of friends (ex-colleagues, role-players, fencers, fans etc) at the same time.
First two to arrive were Heather, uberslasher fan, and Derrick, strategy management consultant turned banker. Out of the blue, Heather just suddenly said "I was recently really surprised to discover how much I knew about male homosexual sex from all the slash fiction I've read".

I must admit, slash fiction is a strange thing... i'm not a fan, but some can be sensitively done. Smallville fan fiction has a lot of slash in it, especially Clark/Lex.
